For a hundred and fifty years, the Nerello Mascalese has been the soul of the Gangemi family
We persist in studying it to enhance excellent sparkling wines, experimenting with increasingly longer aging and delicate dosages.

Forty-eight months of aging on lees give gastronomic bubbles with an enchanting mousse. 
Well-balanced, with zesty acidity and minerality. 
Have fun experimenting by pairing it with shellfish, sauced pastas, and the most savoury fish dishes.

 

IN THE VINEYARD

TERRAIN

Vineyards on the northern slope of Etna, in the Castiglione di Sicilia and Randazzo areas, on sandy soils of volcanic origin, with wide temperature variations from day to night.

TRAINING SYSTEM

Bush and cordon training.

HARVEST

The Nerello Mascalese grapes are picked by hand in mid-September, before they are fully ripe, to preserve their zesty acidity and moderate sugar content.

VINE AGE

Average 15 years.

70 quintals (7000 kg) per ha.

IN THE WINERY

Vinification: gentle whole-bunch pressing, for vinification as a white wine. The first fermentation takes place at low temperatures. The second fermentation is in the bottle, in accordance with the Champenoise method (Metodo Classico), in the spring following harvest.

Ageing: after the second fermentation, the wine remains on its lees for at least 48 months in our underground ageing cellars, a unique and fascinating place you can see when you visit the winery.

TASTING NOTES

Bollenere Extra Brut has a bright straw-yellow colour and fine, persistent mousse. Tasting it is like being on the volcano, surrounded by intense scents of white flowers and a delicious bready aroma that anticipates the softness and creamy mousse.

STRUCTURE

48 months of ageing on the lees give gastronomic bubbles, with a creamy, soft and enchanting mousse, which together with zesty acidity and mineraly make Bollenere Extra Brut harmonius and well-balanced.
