IN THE VINEYARD

TERRAIN

Vineyards in the highest zones on the east side of the Volcano, on sandy soils of volcanic origin, with wide temperature variations from day to night.

TRAINING SYSTEM

Cordon training.

HARVEST

The Nerello Mascalese grapes are picked by hand in mid-September, before they are fully ripe, to preserve their zesty acidity and moderate sugar content.

VINE AGE

5-15 years.

QUANTITY PER HECTARE

80-90 quintals (8000-9000 kg) per ha.

IN THE WINERY

Vinification: using the technique for vinifying red grapes as white wine, a gentle whole-bunch pressing is followed by first fermentation at low temperatures. The second fermentation follows the Italian (Martinotti-Charmat) method. method. Ageing: the wine remains on its lees for at least 6 months.

TASTING NOTES

Bollenere is straw-yellow with a fine, persistent mousse and aromas of white flowers and bread. Creamy fizz and good body complete this wine, whose freshness expresses all the energy of the Volcano’s soil.
