Vinification<\/strong>: gentle whole-bunch pressing, for vinification as a white wine. The first fermentation takes place at low temperatures. The second fermentation is in the bottle, in accordance with the Champenoise method<\/a> (Metodo Classico), in the spring following harvest.<\/p>
