Vinification<\/strong>: gentle whole-bunch pressing, for vinification as a white wine. The first fermentation takes place at low temperatures. The second fermentation is in the bottle, in accordance with the Champenoise method<\/a> (Metodo Classico), in the spring following harvest.<\/p>

Ageing<\/strong>: after the second fermentation, the wine remains on its lees for at least 60 months in our underground ageing cellars, a unique and fascinating place you can see when you visit the winery<\/a>.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
