We persist in studying it to enhance excellent sparkling wines, experimenting with increasingly longer aging and delicate dosages.
The six months of aging on lees give aromatic complexity while preserving the freshness of the noble indigenous grape variety.

IN THE WINERY
Vinification: using the technique for vinifying red grapes as white wine, a gentle whole-bunch pressing is followed by first fermentation at low temperatures. The second fermentation follows the Italian method.
Ageing: the wine remains on its lees for at least 6 months.
TASTING NOTES
Bollenere is straw-yellow with a fine and persistent mousse, and aromas of white flowers and bread crust. Creamy fizz and good body complete this wine, whose freshness expresses all the energy of the Volcano’s soil.

Straw-yellow with fine, persistent mousse.
NOSE
Very aromatic, with citrus notes, intense scents of white flowers and persistent bready aromas.
STRUCTURE
Excellent freshness and good body well balance a pleasant residual sugar. The creamy mousse makes Bollenere Brut à demì velvety on the palate.
