IN THE VINEYARD

TERRAIN

Vineyards in the highest zones on the east side of the Volcano, on sandy soils of volcanic origin, with wide temperature variations from day to night.

TRAINING SYSTEM

Cordon training.

HARVEST

The Nerello Mascalese grapes are picked by hand in mid-September, before they are fully ripe, to preserve their zesty acidity and moderate sugar content.

VINE AGE

5-15 years.

80-90 quintals (8000-9000 kg) per ha.

IN THE WINERY

Vinification: using the technique for vinifying red grapes as white wine, a gentle whole-bunch pressing is followed by first fermentation at low temperatures. The second fermentation follows the Italian method.

Ageing: the wine remains on its lees for at least 6 months.

TASTING NOTES

Bollenere is straw-yellow with a fine and persistent mousse, and aromas of white flowers and bread crust. Creamy fizz and good body complete this wine, whose freshness expresses all the energy of the Volcano’s soil.

NOSE

Very aromatic, with citrus notes, intense scents of white flowers and persistent bready aromas.

STRUCTURE

Excellent freshness and good body well balance a pleasant residual sugar. The creamy mousse makes Bollenere Brut à demì velvety on the palate.

Al palato ha un gusto intenso, freschezza, scorrevolezza e sapidità.

ENG Particular the sparkling wine Metodo Martinotti Bollenere Brut. Produced from Nerello Mascalese grapes plus a 5% white grape variety, it shows a fragrant nose of citrus, currant, strawberry, white-pulp fruit and a hint of yellow flowers. On the palate it has an intense taste, freshness, smoothness and flavor.
