We persist in studying it to enhance excellent sparkling wines, experimenting with increasingly longer aging and delicate dosages.

High-altitude heroic vineyards on the northern slope of Etna, on very fertile lava soils naturally rich in mineral salts, with wide temperature variations from day to night, especially during the ripening stage.

IN THE WINERY
Vinification: gentle whole-bunch pressing, for vinification as a white wine. The first fermentation takes place at low temperatures. The second fermentation is in the bottle, in accordance with the Champenoise method (Metodo Classico), in the spring following harvest.
Ageing: after the second fermentation, the wine remains on its lees for at least 60 months in our underground ageing cellars, a unique and fascinating place you can see when you visit the winery.
TASTING NOTES
Bollenere Brut Nature has a bright straw-yellow colour and fine, persistent mousse. Tasting it is like being on the volcano, surrounded by fresh mineral and savoury notes, that anticipates the softness and creamy mousse.

Bright straw-yellow with fine, persistent mousse.
NOSE
Spicy and entising aromas combine well with slight hints of white flowers and a delicious bready aroma.
STRUCTURE
60 months of ageing on the lees give a creamy, mouth-filling mousse.
The zero dosage enhances a fresh and savoury taste.
