Asanguefreddo is the traditional Etna wine, produced on the slopes of the Volcano.
It comes from the principal native grape variety, Nerello Mascalese, around which our family history revolves.
Vinified in the old way, it has a delicate, persuasive body that shows its personality best when served cold.
IN THE VINEYARD
TERRAIN
Vineyards on the north slope, in the Castiglione di Sicilia and Randazzo zones, on sandy volcanic soils, with wide temperature differences from day to night during the ripening season.
TRAINING SYSTEM
Cordon training.
HARVEST
The grapes are picked by hand in early October.
VINE AGE
10-20 years.
QUANTITY PER HECTARE
80 quintals (8000 kg) per hectare.
IN THE WINERY
Vinification: cold maceration and fermentation at low temperatures on the skins for a few days.
Ageing: in stainless steel tanks for 4 months.
TASTING NOTES
Asanguefreddo is a light ruby red enlivened with pleasing violet tones. The red fruit aromas are reminiscent of the vineyard and lead to an elegant, persistent, pure wine with a fresh, inviting fragrance.

Asanguefreddo should be drunk chilled to show off its inviting, delicate body and enhance the variety’s elegance. We suggest pairing it with pasta with sea-urchins, squid-ink, sarde a beccafico (sardines stuffed with pine-nuts and herbs) and tuna pasta. It makes a good summer partner for meat due to its fragrance and freshness.
